Ingredients
- 1⁄2 cup of pumpkin seeds
- 1 cup of shredded toasted coconut (see instructions below)
- 2 tablespoons of chia seeds
- 1⁄2 tablespoon of ground cardamom
- 1⁄2 tablespoon of ground cinnamon
- 1 tablespoon of raw honey or molasses
- 1⁄4 teaspoon of salt
- 1⁄4 cup of coconut oil
- Toasted pumpkin seeds (pepitas), for garnish
Method
In a blender, combine pumpkin seeds, shredded coconut, chia seeds, cardamom, cinnamon, honey (or molasses), salt, and coconut oil. Blend until well combined.
Form the mixture into small balls and roll them in toasted pumpkin seeds (pepitas) for added crunch.
Refrigerate the coconut balls until firm and ready to enjoy.
