Ingredients

  • 3 tablespoons of ghee
  • 1 large onion, finely diced
  • 2 tablespoons of ground cumin
  • 2 tablespoons of turmeric
  • 2 teaspoons of ground coriander
  • 2 teaspoons of black mustard seeds
  • 1 tablespoon of paprika
  • 3 eggplants, peeled and chopped
  • 3 large potatoes, chopped
  • 1½ cups of cauliflower florets
  • 2 tomatoes, diced
  • 1 (15-ounce) can of vegetable broth
  • 1½ cups of unsweetened coconut flakes
  • Sea salt, to taste
  • 1 handful of fresh mint leaves, chopped

Method

Step 1

Heat ghee in a large soup pot over medium heat. Add diced onion, ground cumin, turmeric, coriander, mustard seeds, and paprika. Sauté for 2 to 3 minutes until fragrant.

Step 2

Introduce eggplant and potatoes to the pot, cooking for an additional 5 minutes.

Step 3

Incorporate cauliflower, diced tomatoes, and vegetable broth. Simmer for 15 to 20 minutes until vegetables are tender.

Step 4

Meanwhile, in a small skillet over medium heat, dry-toast coconut flakes until golden brown, approximately 1 to 2 minutes.

Step 5

To serve, garnish the stew with toasted coconut, sea salt, and freshly chopped mint.

Customization Tips

  • Vatas:

    Substitute coconut milk for vegetable broth and opt for squash instead of eggplant. Pair with yogurt for enhanced experience.

  • Pittas:

    Replace vegetable broth with coconut milk and experiment with potatoes, squash, or zucchini instead of eggplant. Add a splash of lemon juice.

  • Kaphas:

    Introduce minced fresh ginger or chili to balance the sweetness of coconut. Omit coconut for a lighter option.
