Ingredients
- 1⁄4 cup of coconut oil
- 1 handful of fresh mint, finely chopped
- 1 garlic clove, minced
- 1 cup of raw cashews, roughly chopped
- 2 cups of basmati rice
- 4 cups of vegetable broth
- 1 teaspoon of salt
Method
Heat coconut oil in a medium pot over medium heat. Add chopped mint, minced garlic, and chopped cashews. Sauté for 2 to 3 minutes until fragrant.
Stir in basmati rice and continue cooking for an additional 2 minutes.
Pour in vegetable broth and add salt. Bring to a boil.
Reduce the heat to low, cover the pot, and let simmer for 15 minutes until the rice is tender.
